Millet pancakes with raspberry mousse


Ingredients (for about 6 pancakes)

  • Millet flour (1/4 cup)
  • Egg (1 piece)
  • Baking Powder (1/2 teaspoon)
  • Natural yogurt (6 tablespoons)
  • Raspberries (1 cup)
  • Banana (1 piece)
  • Xylitol (1 tablespoon)


  1. Blend the banana with yogurt, baking powder, flour, and egg.
  2. Put the prepared mass with a spoon on a heated pan (without fat). Cover the pan and keep the pancakes on one side until lightly golden brown. Then flip them over.
  3. In the meantime, prepare the raspberry mousse: blend the raspberries and the xylitol.
  4. Serve ready pancakes with the raspberry mousse. There are 3 pancakes per serving.
