Spicy salad with lentils, basil, tomato, and olives

VERDEAT

Ingredients (2 servings):

  • red lentils (½ cup of dry product, about 90 g)
  • tomato (2 pieces)
  • chili pepper (1 piece – small size)
  • black olives (2 tablespoons)
  • fresh basil (a few leaves)
  • linseed oil (1 tablespoon)
  • Suggested spices: Provencal herbs, salt, sweet smoked paprika

Preparation:

  1. Cook the lentils.
  2. Chop the tomatoes, chop the chili pepper.
  3. Drain the olives, and cut them in half.
  4. Mix the cooked lentils with linseed oil, spices, pieces of tomato and pepper, and olives.
  5. Garnish with fresh basil leaves.
